Products

Where are your products from?

Most of our items are from Japan with Japanese quality standards you can trust.

Where are your fresh uni from?

From Hokkaido, Japan: We select reputable brands available each week during the live auction at Toyosu Market. Market price may fluctuate, but the quality won’t change. We only bring you the best uni on the market!

From Santa Barbara, California, USA: Known as the best Uni in North America, Uni from Santa Barbara is labeled as Hokkaido’s main competition in terms of overall quality.
Differences between Japan Uni and Santa Barbara Uni
  • They are different species. Common varieties of Japanese uni are Ezo Bafun, Bafun, Kita Murasaki, and Murasaki. Santa Barbara Uni are mostly Red Sea Urchin.
  • Santa Barbara uni is much larger in size than that found in Japan.
  • The taste and texture of uni is totally dependent on region and diet. The quality of kelp (or kombu) that uni are feeding on results in different flavors.
  • Japan Uni is smooth, creamy, umami-rich, and elegantly sweet. Santa Barbara Uni is firm, buttery, and sweeter. (It’s very subjective and more of a personal preference. Try them all and let us know what you think!)

Handling fresh uni

Keep your fresh uni refrigerated (never frozen) at all times and consume as soon as possible, ideally within 5 days of opening.

Handling fresh seafood

Store fresh seafood under refrigeration. Please refer to the product pages for specific handling instructions.

Handling frozen seafood and meat

  • Place frozen foods in the freezer upon delivery. Frozen seafood and meat that arrive partially thawed or cold to the touch can be safely refrozen in its original packaging without loss of quality.
  • Defrost overnight in the refrigerator to ensure safety and quality.
